    bananas, halved lengthwise
  • 1
    orange, rind
  • 400
    ml
    lemon juice
  • 100
    ml
    brown sugar
  • 15
    ml
    sherry
  • 5
    ml
    butter
  • 15
    ml
    cornflour
  • extra brown sugar
 

Method

 
Preheat the oven to 190 ºC (375 ºF). Grease an ovenproof dish with margarine. Place the bananas in the dish with the cut sides down. Mix the remaining ingredients, except the extra bown sugar, in a saucepan and bring to the boil, stirring continuously. Pour over the bananas and sprinkle a little brown sugar over each banana. Bake for about 30 minutes or until the bananas are soft and pale brown. Serve with cream or ice cream.
