Banana crumpets

A sweet breakfast treat or teatime delight.

Ingredients

 
  • 2
    extra large eggs
  • 50
    g
    sugar
  • 140
    g
    flour
  • 1
    tsp
    baking powder
  • a pinch
    salt
  • 1/4
    tsp
    cinnamon powder
  • 125
    ml
    milk
  • 30
    ml
    butter
  • 3
    ripe bananas, cut in pieces
  • oil for frying
Servings: Change Serving
 
 

Method

 
Beat eggs and sugar together until light and fluffy.
Sift flour, baking powder, salt and cinnamon powder then add to egg mixture.
Add milk, melted butter and bananas and mix well
Heat oil in a frying pan and place spoonfuls of batter and shallow fry till light brown on both sides.
Serve with caramel sauce, slices of banana and pecan nuts.

Some pears come to market rock hard, but if left at room temperature they will soften. Tucking them into a sealed paper bag with a banana speeds the process.
