Banana bread

    walnuts
  • 500
    ml
    white rice flour
  • 125
    ml
    cornflour
  • 10
    ml
    bicarbonate of soda
  • 375
    ml
    mashed banana
  • 65
    ml
    sunflower oil
  • 2
    large eggs
  • 30
    ml
    lemon juice
  • 5
    ml
    vanilla essence
  • 150
    ml
    golden syrup
 

Method

Process 60 ml of the nuts in a blender until fine. Mix with the flours and bicarbonate of soda. Chop half of the remaining nuts coarsely and add to the mixture. Mix the banana, oil, eggs, lemon juice, vanilla essence and 65 ml syrup together in a separate bowl and then mix into the dry ingredients. Stir until just combined. Pour into a greased 22 x 12 cm loaf tin. Decorate the surface with remaining nuts and bake in preheated 170 ºC oven for 1 hour or until a skewer comes out clean. Drizzle the remaining syrup over the loaf while it is still warm. Allow to cool slightly before slicing. Serve spread with butter. Makes 1 loaf. Oven temperature:
