    soft brown sugar

    golden syrup
  • 4
    ripe bananas, mashed
  • 2
    eggs, whisked
  • 625

    self-;raising flour

    ml
    bicarbonate of soda
  • 5
    ml
    nutmeg
  • 10
    ml
    ground ginger
  • 5
    ml
    vanilla essence
  • 30
    ml
    milk
  • 125
    ml
    chopped walnuts
 

Method

 
Preheat the oven to 180 °C and lightly grease a 20 x 10 x 7 cm loaf tin with butter or margarine. Cream the butter, sugars and golden syrup together until light and fluffy. Beat small quantities of the mashed banana and eggs in at a time. Sift the dry ingredients together. Blend the vanilla essence and milk. Fold the dry ingredients into the butter mixture, followed by the milk and finally the nuts. Mix lightly, turn into the loaf tin and bake for about one hour or until a testing skewer comes out clean. Cool slightly in the tin, turn out and serve sliced with butter. Makes a large loaf.
