Banana and almond wholewheat muffins

    wholewheat flour
  • 45

    castor sugar
  • 10
    ml
    baking powder
  • 135
    g
    almonds, finely chopped
  • pinch of salt
  • 1
    egg, beaten
  • 50
    ml
    each soy milk and sunflower oil
  • 2
    large bananas, peeled and roughly chopped
  • 20
    ml
    marmalade of your choice
 

Method

 
Preheat oven to 180 ºC. Line 6 hollows in a muffin pan with paper muffin cases. Mix together flour, castor sugar, baking powder, 85 g of the chopped almonds and salt. In a separate bowl, mix together egg, soy milk and oil. Stir into flour mixture until just blended. Stir in bananas. Spoon into cases until two thirds full. Bake for 20-30 minutes, or until a skewer inserted in the centre comes out clean. Leave to cool. Gently heat marmalade and brush over muffins. Sprinkle remaining almonds on top. Makes 6.
