    Bananas
  • Vegetable oil
  • Batter

    cake flour
  • 50
    g
    cornflour
  • 15
    ml
    castor sugar
  • 15
    ml
    baking powder
  • 1
    ml
    salt
  • 200
    ml
    water (approximate amount)
 

Method

Peel the bananas and cut into chunks.

Batter
Sift together the flour, cornflour, castor sugar, baking powder and salt. Mix in enough water to make a thickish coating batter.

Heat oil for deep-frying in a medium saucepan. Dip the banana chunks into the batter and deep fry for a minute or two until crisp and golden. Drain on kitchen paper. Pile the fritters on a plate and serve warm.
