Ingredients (6)

8.00 bananas — green
100.00 ml peanut oil — or sunflower oil, for deep-frying
6.00 garlic — whole cloves
3.00 fresh ginger — sliced
0.50 onion
100.00 ml dukkah — to serve

Method:

1. Peel the bananas and slice very thinly
using a mandoline slicer, vegetable peeler
or sharp knife (the thinner the pieces, the crisper the chips will be). Place in a bowl of cold water to prevent discolouration.
Pat dry with a paper towel before frying.

2. Heat a saucepan of oil along with the
garlic, ginger and onion over a medium
heat. Once the oil is hot (about 180°C),
remove and discard the garlic, ginger
and onion before it goes too dark.

3. Fry the banana chips in batches
until golden brown and crisp. Drain on
absorbent paper and sprinkle the banana
chips with Malindi dukka. Enjoy as a
snack while still warm.
