    onion, quartered
  • 2
    cloves garlic, peeled
  • 3

    piece fresh ginger
  • 75
    ml
    fresh coriander leaves, torn into pieces
  • 15

    coriander seeds, crushed
  • 2
    lemons, grated rind and juice
  • 30
    ml
    oil
  • 5
    large, ripe tomatoes, cut into wedges
  • 600
    g
    large frozen prawns, defrosted at room temperature
  • salt and freshly ground black pepper
  • garam masala to taste
 

Method

 
Process the onion, garlic, ginger, coriander leaves and seeds, and lemon juice and rind in a food processor until smooth. Heat the oil in a wok or large pan and stir-fry the paste for about 5 minutes. Add the tomato wedges and heat until just warm. Add the prawns, and stir-fry until just done, not longer than 5 minutes, Season to taste and sprinkle with the garam masala just before serving. Serves 6.
