Balsamic glazed pork fillet with mash

Ingredients (11)

800.00 g pork fillet
1.00 red chilli — finely sliced
5.00 garlic — cloves, sliced
125.00 ml vinegar — balsamic
265.00 ml stock — chicken
2.00 Teaspoons sugar
1.00 orange — zest only
0.00 freshly ground black pepper
6.00 potatoes — peeled and chopped
1.00 onion — finely chopped
60.00 ml milk — fat-free

Method:

Place pork in a shallow container.

Mix remaining ingredients together and pour over pork.

Marinate for 30 to 60 minutes, turning from time to time.

Heat a little olive oil (or reserved marinade if you don’t want to use fat at all) in a large pan until hot.

Add pork, (halve fillets to fit if necessary) and cook for 3 minutes on each side.

Pour over remaining marinade cook for another 5 to 8 minutes.

Remove from heat, slice, drizzle over sauce and serve with low-fat mash.

Peel and chop 6 potatoes, finely chop 1 onion and halve 2 garlic cloves. ]

Cover with water and add 1 T (15 ml) veg or chicken stock, bring to the boil reduce heat and cook until done.

Drain potatoes and mash well with 1/2 C (125 ml) vegetable or chicken stock and 1/4 C (60 ml) fat-free milk.

Season with salt and pepper, and mash.

Add milk or stock if desired.
