Balsamic chicken with brown mushrooms

    large chicken breast fillets

    large fresh brown mushrooms, wiped clean with a damp cloth
  • 45
    balsamic vinegar
  • 2
    cloves garlic, crushed

MARINADE: Combine vinegar, garlic and olive oil in a large bowl and mix well. Cut 3 diagonal slashes in each chicken breast. Place chicken in marinade and marinate, covered, for 1 hour, turning once. Heat oil in a frying pan until hot but not smoking. Add chicken pieces and brown on both sides. Remove and keep warm. Add mushrooms to pan and cook briefly on both sides until tender, about 5 minutes. Return chicken to pan, add marinade and cook over low heat until chicken is heated through. Serve chicken and mushrooms with steamed broccoli and mashed potatoes.
