    margarine

    sugar
  • LIQUID MIXTURE

    extra-;large eggs, beaten

    oil
  • 125
    ml
    milk
  • 125
    ml
    sour milk or plain yoghurt
  • 5
    ml
    vanilla essence
  • 1
    beaten egg and milk for brushing
 

Method

 
Preheat the oven to 220 °C and spray a baking tray with non-stick cooking spray or smear lightly with butter. Sprinkle a little flour over it. Sift the dry ingredients together. Cut the butter into smaller pieces and add. Rub in with your fingertips to the consistency of coarse breadcrumbs. Stir in the sugar and make a hollow in the middle. Beat all the liquid ingredients together and pour into the hollow. Mix using two knives and blend into soft dough. Press together with your hands and press slightly flat. Press out scones using a scone cutter, and arrange closely together on a baking tray. Brush with a mixture of beaten eggs and milk, and bake for 20 to 25 minutes until risen and cooked. Allow to cool slightly. Serve with a variety of jams and cream.
