Baked sweet potatoes with pepper butter

6.00 sweet potatoes — large
20.00 ml lemon juice — fresh
15.00 ml lemon — zest only
185.00 ml butter
15.00 ml black peppercorns — whole
salt — pinch

Method:

Preheat the oven to 180 ºC. Prick each sweet potato a few times with a fork and arrange on a baking sheet. Bake in the bottom of the oven for about 1 hour until just tender. Meanwhile beat the lemon juice and rind, butter, black pepper and salt together until light. Place the cooked sweet potatoes on a serving platter, cut them into slices and drizzle with a little of the sauce. Serve as a side dish.
Serves 4-6.
