Baked spaghetti frittata

    spaghetti
  • 30
    ml
    olive oil
  • 1
    large onion, thinly sliced
  • 2
    medium-sized green peppers, cored, seeded and thinly sliced
  • 2
    tomatoes, peeled, cored, seeded and coarsely chopped
  • 4
    large eggs
  • 125
    ml
    low fat milk
  • 2
    ml
    salt
  • 3
    ml
    black pepper
  • 250
    ml
    grated white Cheddar cheese
 

Method

Preheat oven to 190 ºC. Cook the spaghetti according to directions on packet. Heat oil in a large, ovenproof frying pan over moderate heat for 1 minute. Add the onion and green peppers. Cover and cook, stirring occasionally for 5 minutes. Drain spaghetti and add to pan along with the tomatoes. Toss lightly to mix. In a large bowl, beat eggs with milk, salt and black pepper. Pour over spaghetti mixture. Arrange cheese on top and bake, uncovered, until the eggs are set (approx 15 to 20 minutes).
