SEMOLINA PUDDING
45.00 ml butter
1.00 orange — zest only
600.00 ml milk
125.00 ml semolina
nutmeg — ground, pinch
1.00 orange — juice only
45.00 ml castor sugar
1.00 eggs — extra-large, whisked
STEWED DRIED FRUIT
250.00 g mixed dried fruit
150.00 ml orange juice
45.00 ml castor sugar
3.00 ml mixed spice — ground

Method:

Preheat the oven to 190 ºC and butter a 22 x 27 cm oven dish or spray with non-stick spray. Add the butter and orange rind to the milk and bring to the boil. Sprinkle the semolina on top of the milk mixture and simmer for about 2-3 minutes while stirring continuously. Remove from the heat, cool slightly and add the nutmeg, orange juice, castor sugar and egg, mixing well. Pour the mixture into the prepared oven dish and bake for about 30 minutes until golden brown and done. Meanwhile prepare the dried fruit: Place the dried fruit, orange juice, sugar and spice in a saucepan and heat over low heat until the sugar has dissolved. Bring to the boil and simmer gently for about five minutes or until the fruit is tender. Cool slightly. Dot the semolina pudding with knobs of butter when it comes out of the oven and sprinkle with a little ground nutmeg. Serve with the stewed dried fruit.
