Baked salmon with small beets


Baked Salmon

    small beetroots
  • 1
    tsp
    vegetable oil
  • 1
    Tbs
    lemon juice
  • 1
    tsp
    sea salt
  • 1/2
    tsp
    freshly ground black pepper
  • 400
    g
    Norwegian salmon
  • 100
    ml
    Mint Crème Fraîche
 

Method

55 mins
 
Set oven to 180 °C
Wrap beetroots in foil and bake in preheated oven until soft, about 45 minutes
Let cool and remove skins
Cut into wedges, cover and set aside
Set oven to 190 °C
Mix oil, lemon juice, salt and pepper together and rub into salmon
Place on a baking tray and bake in preheated oven for 10 minutes
Serve with beetroot wedges and Mint Crème Fraîche

Mint Crème Fraîche
100 ml crème fraîche
1 tsp fi nely chopped fresh mint leaves
1 tsp fi nely chopped fresh dill
Mix ingredients together
