Baked salmon on seasonal vegetables

    prepared mixed vegetables of your choice

    olive oil
  • 4
    salmon fillets
  • 5
    dijon mustard
  • 15
    lemon juice
  • salt and freshly ground black pepper
  • fresh chives


Preheat oven to 180C. Place mixed vegetables on a baking sheet, drizzle with 2 tablespoons of olive oil, season well and roast for 15 minutes. Meanwhile in a non-stick pan, add 2 tablespoons olive oil and brown the skin side of the salmon. Add the salmon to vegetables in oven, drizzle with remaining olive oil, mustard, lemon juice, salt and freshly ground black pepper, cook in oven for 12 minutes. To serve; spoon vegetables on serving plates. Top with salmon and garnish with chives.
