Ingredients (12)

125.00 ml sultanas
45.00 ml rum
6.00 eggs — extra-large
250.00 ml cream
750.00 ml milk
750.00 ml rice — cooked
65.00 ml sugar
65.00 ml brown sugar — soft
5.00 ml vanilla — essence
5.00 ml orange — zest only
salt — pinch

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a large oven dish with non-stick spray.
Soak the sultanas in rum for a few minutes. Whisk the eggs, cream and milk together and add the sultanas and remaining ingredients. Mix well and turn into the prepared oven dish. Bake for about 30 minutes, remove from the oven, sprinkle with extra brown sugar and bake for another 10 minutes or until set.
Serve hot with cream and extra brown sugar.
