Baked pumpkin with vanilla, blue cheese and cashew nuts

    large wedges pumpkin, pips discarded
  • 90
    ml
    brown sugar
  • 60
    ml
    butter
  • 1
    vanilla pod, split lengthways and halved
  • 100
    g
    cashew nuts
  • 125
    g
    blue cheese, crumbled
 

Method

 
Preheat oven to 180 ºC. Place pumpkin wedges on a baking sheet. Sprinkle sugar over and dot with butter and vanilla pieces. Bake for 30-45 minutes, or until soft. Add nuts and cheese and bake for 10 minutes, or until cheese melts. Serves 4.
