Baked potatoes

    large potatoes, scrubbed and pricked
  • splash of vinegar
  • 4
    large eggs
  • 8
    rashers bacon
  • 2
    tomatoes, halved
  • butter to serve
  • salt and milled pepper to taste
 

Method

 
Bake potatoes at 220 ºC for 1 hour, or until tender when squeezed. Pour water to about 5 cm deep in a wide saucepan and add vinegar. Heat until simmering. Drop in eggs, 1 at a time, and poach to taste. Meanwhile, grill bacon and tomato halves. Cut a cross in top of potato and squeeze to open up. Add a pat of butter. Top each potato with a tomato half, a poached egg and 2 bacon rashers. Season to taste and serve.
