Baked potato with pesto and bacon

    large potatoes
  • 1
    pot bought basil pesto
  • 1
    punnet baby tomaotes
  • 2
    wheels feta
  • 1
    packet streaky bacon
  • Olive oil
  • Seasoning

Rub the potatoes in olive oil and salt.
Bake the potatoes in an oven for 45 mins - 1 hour so they are crisp on the outside.
If you want to be quick, microwave the potatoes for 5-10 mins depending on your microwave.
Pan fry the bacon to how you like it.
Add the baby tomatoes to the pan and toss for a few minutes until they are splitting.
To serve: Cut the potato open length ways and ladle on the pesto, bacon and crumble over the feta.
Enjoy with a salad.
