Baked potato with egg

4.00 potatoes — large, scrubbed
oil
salt and freshly ground black pepper
50.00 ml sour cream — or milk
4.00 eggs — medium
fresh parsley — chopped

Method:

Preheat the oven to 200 ºC (400 ºF).
Prick the surface of each potato all over with a fork and brush with a little oil. Season with salt and wrap each potato in aluminium foil. Place the potatoes on a baking tray and bake for 1 hour or until the potatoes are done.
Cut out a hollow in each potato and scoop out a tablespoonful of the flesh. Mash the scooped out potato, season with salt and pepper and add the sour cream or milk to make a smooth mixture. Spoon into a piping bag and set aside.
Season each potato hollow with salt and pepper and brush with oil. Break an egg into each hollow and pipe some of the mashed potato on top. Return the potatoes to the baking sheet, cover with aluminium foil and bake for 15 to 20 minutes or until the eggs are cooked and set. Sprinkle with a little parsley and serve immediately.
