Baked potato treats

    x 200 g potatoes, washed
  • STILTON FILLING
  • 85
    g
    Stilton cheese, crumbled
  • 1
    handful of fresh watercress, coarsley chopped
  • 25
    ml
    mango or peach chutney
  • SALAMI FILLING
  • 2
    red sweet peppers, roasted and skinned (or, use canned pimentos)
  • 6
    slices salami, sliced into strips
  • 6
    seeded black olives, halved
  • 30
    ml
    crème fraîche
  • 5
    ml
    basil pesto
 

Method

 
Prick the potatoes with a fork twice and place on paper towels in a microwave oven.
Microwave on HIGH for eight minutes and let the potatoes rest for one minute before touching them.
Cut a cross in the top of each and squeeze to open them up.
Add the filling of your choice.
STILTON FILLING
Spoon half the Stilton and half the chutney into the hot potatoes.
Add the watercress and top with the rest of the Stilton and chutney.

SALAMI FILLING
Slice the roast peppers in strips.
Top the hot potatoes with the pepper and salami strips. Add the olives.
Mix the crème fraîche and pesto and spoon over the potatoes.
