Baked potato salad

    butter
  • 30
    ml
    cake flour
  • 315
    ml
    milk
  • salt and freshly ground black pepper
  • 125
    ml
    mayonnaise
  • 6
    medium-sized potatoes, peeled and boiled until soft
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray a 20 cm ovenproof dish with non-stick spray. Melt the butter in a pan. Add the cake flour and stir until smooth. Gradually add the milk, stirring continuously until the sauce comes to the boil and thickens. Season to taste with salt and black pepper. Remove from the heat and stir in the mayonnaise. Slice the potatoes and place in the greased oven dish. Pour the sauce over the potatoes. Bake far about 20 minutes or until bubbly and golden brown on top. Serve hot with meat. Serves 4.
