Baked orange pudding

    extra-large eggs, separated
  • 100
    g
    sugar
  • 60
    ml
    cake flour
  • 250
    ml
    water
  • 180
    ml
    orange juice
  • 15
    ml
    lemon juice
  • 5
    ml
    grated lemon rind
 

Method

 
Preheat the oven to 180 ºC (35C ºF). Grease a 21 x 21 x 6 cm dish with margarine, or spray with non-stick spray. Beat the egg yolk and sugar together until light. Add the cake flour and water and blend. Add the orange and lemon juice and rind. Blend well. Whisk the egg whites until stiff and fold into the mixture. Spoon into the prepared dish. Place the dish in a pan filled with boiling water and bake for 45 minutes or until set. Serves 4-6.
