Baked liver and cheese

    oil

    onion, chopped

    clove garlic, chopped
  • 1
    kg
    sheep's liver, cleaned and tubes removed
  • 200
    g
    Cheddar cheese, grated
  • 50
    ml
    vinegar
  • parsley, finely chopped
  • salt
  • pepper
  • coriander
  • 2
    eggs, slightly beaten
  • 250
    ml
    milk
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Heat the oil in a pan and sauté the onion and garlic until soft. Add the liver and fry until slightly brown. Mash. Add the cheese, vinegar, parsley and seasonings to the liver. Mix well. Turn into a greased ovenproof dish. Combine the eggs and milk and pour over the mixture. Bake for about 30 minutes until golden brown. Serves 6.
