Baked hake with Asian-Italian salsa

Ingredients (9)

SALSA:
1 rosa tomatoes — chopped
1 red onion — small, finely chopped
1 fresh coriander — handful, chopped
3 anchovy fillets — chopped
1 tsp capers
2 Tbs lime juice
1/2 Tbs fish sauce
salt and freshly ground black pepper — to taste
2 hake fillets

Method:

Combine ingredients to make salsa.
Place hake fillets in a small,
oven proof baking dish and cover with salsa.
Bake at 200 °C for 25-30 min,
until fish is cooked through.
Baking like this will produce a lot of
liquid, which can be spooned over the fish before serving.
