Baked hake with Asian-Italian salsa

Ingredients

  • Salsa:
  • 1
    handful of baby rosa tomatoes, chopped.
  • 1
    small red onion, finely chopped
  • 1
    handful of fresh coriander, roughly chopped
  • 3
    anchovy fillets, chopped
  • 1
    tsp
    capers
  • 2
    Tbs
    lime juice
  • 1/2
    Tbs
    fish sauce
  • Salt and pepper to taste
  • 2
    hake fillets
 

Method

30 mins
 
Combine ingredients to make salsa.
Place hake fillets in a small, oven proof baking dish and cover with salsa.
Bake at 200 °C for 25-30 min, until fish is cooked through.
Baking like this will produce a lot of liquid, which can be spooned over the fish before serving.
