Baked guava pudding

    extra-large eggs
  • 125
    ml
    sugar
  • 250
    ml
    milk
  • 410
    g
    guavas, drained and sliced
  • 2
    slices white bread, crusts removed
  • butter
  • extra sugar
 

Method

Preheat the oven to 180ºC (350ºF). Spray an ovenproof dish with non-stick food spray. Whisk the eggs and sugar together and add the milk. Whisk well again. Add the guavas and mix well. Butter the slices of bread and cut into fingers. Add to the guava mixture and spoon into the prepared oven dish. Sprinkle with a little extra sugar and bake for 40 minutes or until set. Serve with cream or custard. Serves 4.
