Baked fish with mayonnaise and breadcrumb crust

    fresh hake or kingklip fillets, skinned
  • salt and freshly ground black pepper
  • 60
    ml
    mayonnaise
  • 200
    ml
    fresh breadcrumbs
  • 80
    ml
    finely grated Parmesan cheese
  • 80
    ml
    finely grated mature Cheddar cheese
  • 5
    ml
    seafood masala
 

Method

 
Preheat the oven to 220 ºC and grease an ovenproof dish with butter or non-stick spray. Place the fish (cut into 4 portions) in the dish, season with salt and freshly ground black pepper and spread each fillet with 15 ml (1 tbsp) mayonnaise. Mix the breadcrumbs, cheeses and masala and sprinkle on top. Bake the fillets uncovered, for 15 to 20 minutes or until they can be flaked with a fork. Serve with baby potatoes and a green salad.
