Baked fish with ginger and herb butter

    oil
  • 1
    onion, sliced
  • 1
    cabbage, shredded
  • 1
    red pepper, sliced
  • 4
    fresh fish fillets or steaks
  • 30
    ml
    lemon juice
  • 5
    cm
    piece fresh ginger, peeled and sliced into strips
  • 3
    cloves garlic, crushed
  • 80
    ml
    butter
 

Method

Preheat oven to 200 ºC. Heat oil in a pan. Stir-fry onion, cabbage and pepper over high heat for 3 minutes. Place in a greased ovenproof dish. Top with fish. Sprinkle each piece of fish with lemon juice, then top with ginger strips. Mix garlic and butter together and dot half the mixture over fish. Season with salt and freshly ground black pepper. Cover with foil and bake in the oven for 15-20 minutes. Uncover and top with remaining garlic butter, then brown under a grill for a few minutes. Serve immediately. Serves 4.
