Ingredients (12)

Sauce
200.00 ml mayonnaise
10.00 ml fresh lime juice
15.00 ml capers
4.00 gherkins — small, finely chopped
5.00 ml mustard — powder
FISH AND CRUST
2.00 fish
0.00 sea salt and freshly ground black pepper
60.00 ml breadcrumbs — fresh
45.00 ml parmesan cheese — grated
15.00 ml fresh coriander — chopped
0.00 cayenne pepper — pinch
1.00 lime — zest only

Method:

Preheat oven to 220 °C and have a baking tray ready.
Mix all the ingredients for the sauce.
Season the fish with salt and pepper, arrange on a baking tray and spread each fillet with the prepared sauce.
Mix the breadcrumbs, cheese, coriander leaves, cayenne pepper and lime rind and sprinkle a layer of the mixture over each fillet.
Bake the fish until it flakes easily with a fork (about 10 to 15 minutes, depending on the thickness of the fillets) and the crumb crust is crisp and golden brown.
Serve with baby potatoes or potato wedges and a green salad.
