1. Lay the chicken out on a work surface and place a sheet of clingwrap over it.
Flatten using a meat mallet or rolling pin.
2. Place the tomatoes, cheese and basil in a food processor. Pulse for about
10 seconds until finely chopped.
3. Spoon some mixture onto each of the fillets and roll up. Wrap tightly in a slice of ham and secure with toothpicks. Place in a shallow baking dish and bake in a
preheated oven for 15 to 20 minutes or until cooked through.
4. Dressing While the chicken is in the oven, combine all the ingredients for the
dressing in a saucepan and stir over a medium heat until heated through. When
the chicken is cooked, remove from the oven and slice. Serve drizzled with
