Ingredients (8)

BISCUIT CASE
400.00 g tennis biscuits — or Marie biscuits, crushed
250.00 g butter — melted
85.00 ml cocoa powder
FILLING
600.00 g cream cheese — smooth
60.00 ml castor sugar
4.00 eggs — beaten
15.00 ml vanilla — essence
250.00 ml cream — thick

Method:

Preheat oven to 180 ºC.
BISCUIT CASE: Mix crushed biscuits, butter and cocoa, and use to line base and sides of a 20 cm diameter springform pan.
FILLING: Mix all ingredients and pour into biscuit case. Bake for 1 hour. Leave to cool in oven.
Serve, sliced, with poached plums, peaches or nectarines.
