  • BISCUIT CASE

    tennis or marie biscuits, crushed
  • 250
    g
    butter, melted
  • 85
    ml
    cocoa powder
  • FILLING
  • 600
    g
    good-quality smooth cream cheese
  • 60
    ml
    castor sugar
  • 4
    medium eggs, beaten
  • 15
    ml
    vanilla essence
  • 250
    ml
    thick cream
 

Method

 
Preheat oven to 180 ºC. BISCUIT CASE: Mix crushed biscuits, butter and cocoa, and use to line base and sides of a 20 cm diameter springform pan. FILLING: Mix all ingredients and pour into biscuit case. Bake for 1 hour. Leave to cool in oven. Serve, sliced, with poached plums, peaches or nectarines.
