Baked bream (Lithrini fourno ala spetsoita)

Ingredients

    kg
    fresh bream or other fresh fish (cob, red roman), cleaned and scaled
  • 1
    lemon, juice
  • 10
    ml
    freshly chopped rosemary
  • 6
    spring onions, sliced
  • 3
    cloves garlic, chopped
  • 6
    tomatoes, peeled and chopped
  • 100
    ml
    freshly chopped parsley
  • 60
    ml
    olive oil
  • 125
    ml
    dry white wine
  • 30
    ml
    fresh white breadcrumbs
 

Method

20 minutes
 
Make two diagonal slices across each side of the fish. Pour lemon juice over the inside and outside of the fish. Place fish in a greased ovenproof dish. Mix remaining ingredients except the breadcrumbs. Season to taste with salt and freshly ground black pepper. Spoon a little mixture into the insides of the fish. Pour remaining mixture over fish. Sprinkle breadcrumbs over fish and bake in preheated 200 °C oven for 20 minutes, or until cooked through. Serves 4.
