Baked asparagus with ham

Ingredients

    ml
    butter
  • 120
    ml
    flour
  • 420
    ml
    milk
  • 900
    g
    canned medium asparagus spears, liquid reserved
  • 125
    ml
    cream
  • 100
    g
    smoked ham, coarsely chopped
  • 200
    ml
    (or more) mozzarella cheese, grated
 

Method

30 minutes
 
Heat butter in a saucepan, add flour and stir over a medium heat for one minute.
Stir in milk gradually.
Add 210 ml of the asparagus juice and stir over a medium heat until sauce thickens.
Stir in the cream and season with salt and plenty of freshly ground black pepper.
Divide asparagus among four shallow heatproof bowls.
Top with ham and cover with sauce.
Sprinkle with cheese and bake in a preheated 190 °C oven for 10 minutes.
Switch oven to grill setting and grill until the cheese starts to brown.
Sprinkle with herbs and serve with melba toast, a green salad and a crisp dry wine.
