Baked apples with dried fruit

    ml
    mixed dried fruit, finely chopped
  • 50
    ml
    brown sugar
  • 5
    ml
    lemon juice
  • 5
    ml
    lemon rind, grated
  • 3
    ml
    ground cinnamon
  • 25
    ml
    butter, cut into pieces
  • 6
    medium green apples, cored
  • extra brown sugar and cinnamon
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease a baking tray with margarine. Combine the dried fruit, brown sugar, lemon juice, lemon rind, cinnamon and butter. Press the mixture into the hollows of each apple. Place the apples on the greased baking tray and sprinkle with extra sugar and cinnamon. Cover with aluminium foil and bake for about 30 minutes or until the apples are soft.
