Method:

Preheat the oven to 180 °C.
Cut the apples in half width ways and carefully with a teaspoon or apple corer if you have one, remove the core.
Chop the raisins and walnuts and place in a bowl with the sugar, honey, cinnamon and lemon.
Mix well.
Fill each hole in the apples with the nutty mixture until it overflows – be generous and use it all up.
Tear a large square of greaseproof paper (large enough to make a parcel).
Place each apple in the centre of each square.
Bring up the left and right sides and make a fold length ways. Tuck the ends underneath and place on a baking tray.
bear in mind you want to open these parcels in front of each guest so don’t fold the paper over tightly, let there be some space between the apple and the paper.
Place in the oven for 30-40 mins.
Whip the vanilla pod with the cream.
To serve:
Place the parcels on a plate and serve to each person. Either they can open it themselves or you can go around to each place and slash open the bag (from the top) and watch the smiles.
Serve the cream in a bowl on the side and each person needs a spoon over the top of their apple surprise.
