Baked apples

  • 6
    cooking apples, cored
  • 200
    ml
    fruitcake mix
  • 50
    ml
    brandy
  • 50
    ml
    butter
 

Method

Skin the top half of each apple with a vegetable parer. Sprinkle the skinned half with lemon juice to prevent discolouration. Soak the fruitcake mix in the brandy till the fruit is plump. Melt the butter and mix with the fruit mixture. Fill the hole in each apple with the fruit mixture. Bake the apples with the meat roll for the last 40 minutes of the cooking time or till the apples are soft. Serve with the meat roll. Serves 6.
