Baked apple meringue

Ingredients (6)

4.00 apples — green, cored
50.00 ml butter — soft
25.00 ml brown sugar
75.00 g raisins — seedless
MERINGUE
2.00 eggs — white
50.00 g castor sugar

Method:

Preheat the oven to 180 ºC (350 ºF).
Place apples on a baking tray. Mix butter, brown sugar and raisins and spoon into the holes in the apples. Pour a little water into the tray and bake apples 30-35 minutes or until soft, but not disintegrating. Beat egg whites until soft peaks are formed and add the castor sugar by the spoonful. Spoon meringue into a piping bag with a large nozzle and pipe a little meringue on top of each apple. Return apples to oven and bake until meringue is pale brown. Serve hot.
