Baked apple cake

    dates, chopped

    mixed cut glacé peel, finely chopped

    sultanas
  • 5
    ml
    ground cinnamon

    green cooking apples, cored and peeled
  • butter
  • CAKE
  • 1
    packet vanilla cake mix
  • 100
    g
    mixed nuts chopped
  • 90
    ml
    soft brown sugar
 

Method

Preheat oven to 180 C and spray a large square cake tin with non-stick spray. Mix dates and rest of filling ingredients thoroughly and use to fill apples. Place the apples on a baking tray and bake for 30 minutes until just soft. Baste occasionally with melted butter. Prepare the cake mixture according to the directions on the packet and stir in the nuts. Arrange the apples in the prepared cake tin and add the cake mixture. Sprinkle with brown sugar. Bake for a further 45 minutes until the cake is done. Remove and cool slightly. Cut into blocks around each apple and serve with custard. Serves 8-10.
