Baked almond apples

4.00 apples
1.00 orange — zest and juice
65.00 ml fruit mincemeat
1.00 eggs — whites only, lightly whisked
90.00 ml almonds — ground
30.00 ml castor sugar

Method:

Preheat the oven to 200 ºC and spray a baking sheet with non-stick spray or butter lightly.
Peel and core the apples and brush generously with the orange juice. Fill each apple hollow with the fruit mincemeat, using more if the apples are fairly large. Pour the egg white into a fairly deep plate and mix the almonds, orange rind and castor sugar in another plate. Dip the apples in the egg white and roll in the almond mixture until completely covered. Place the apples on the baking sheet, chill for 15 minutes and bake for 50-60 minutes until tender and the coating is crisp and golden brown. Serve hot with custard or toffee sauce or plain sweetened yoghurt.
