Bacon, mushroom and feta savoury pots

    rindless bacon, finely chopped

    butter
  • 125
    g
    fresh mushrooms, finely chopped
  • 1
    small onion, finely chopped
  • 30
    ml
    chopped fresh parsley
  • 250
    ml
    feta cheese, finely crumbed
  • 1
    jumbo egg, whipped
  • 125
    ml
    milk
  • 25
    ml
    self-raising flour
  • 1
    ml
    cayenne pepper
 

Method

 
1. Fry the bacon and set aside. 2. Heat the butter and stir-fry the mushrooms and onion until soft. 3. Add to the bacon and the remaining ingredients. 4. Spoon into the greased muffin pan and bake for 20-25 minutes until golden brown and puffed. 5. Serve hot as a starter or light meal with a salad. Makes 6.
