Ingredients (10)

125.00 g bacon — rindless, finely chopped
15.00 ml butter
125.00 g mushrooms — finely chopped
1.00 onion — small, chopped
30.00 ml fresh parsley — chopped
250.00 ml feta cheese — crumbled
1.00 eggs — whipped
125.00 ml milk
25.00 ml flour — self-raising
1.00 ml cayenne pepper

Method:

1. Fry the bacon and set aside.
2. Heat the butter and stir-fry the mushrooms and onion until soft.
3. Add to the bacon and the remaining ingredients.
4. Spoon into the greased muffin pan and bake for 20-25 minutes until golden brown and puffed.
5. Serve hot as a starter or light meal with a salad.
