Ingredients (10)

4.00 phyllo pastry
25.00 ml butter — melted
FILLING
5.00 bacon — rindless back or shoulder rashers, chopped
1.00 onion — finely chopped
2.00 eggs — lightly beaten
150.00 ml cream
2.00 ml mustard — powder
salt and freshly ground black pepper — to taste
3.00 ml dried parsley
100.00 g shrimp — shelled cooked

Method:

1. Brush phyllo pastry layers with melted butter and place on top of one another. Line a greased quiche dish or 4 small dishes with phyllo pastry. Bake in a preheated 200 ºC oven for 5 minutes.
2. FILLING: Fry bacon until crisp, then drain. Sauté onion in rendered fat until translucent. Beat together eggs, cream and seasoning. Add bacon, onion and shrimps. Pour filling into pastry shell and bake at 180 ºC for 35 minutes or until egg custard has set.
