Bacon and shrimp quiche

    phyllo pastry

    butter, melted
  • FILLING

    rashers rindless back or shoulder bacon, chopped
  • 1
    onion, finely chopped
  • 2
    eggs, lightly beaten
  • 150
    ml
    cream
  • 2
    ml
    mustard powder
  • salt and pepper to taste
  • 3
    ml
    dried parsley, chopped
  • 100
    g
    shelled cooked shrimps
 

Method

 
1. Brush phyllo pastry layers with melted butter and place on top of one another. Line a greased quiche dish or 4 small dishes with phyllo pastry. Bake in a preheated 200 ºC oven for 5 minutes. 2. FILLING: Fry bacon until crisp, then drain. Sauté onion in rendered fat until translucent. Beat together eggs, cream and seasoning. Add bacon, onion and shrimps. Pour filling into pastry shell and bake at 180 ºC for 35 minutes or until egg custard has set. Serves 4-6
