Bacon and pasta salad

    pasta shells
  • salt and freshly ground black pepper
  • 45

    olive or sunflower oil
  • 125
    g
    smoked back bacon, sliced into strips
  • 1
    small onion, sliced
  • 1
    small red pepper, seeded and sliced into strips
  • 30
    ml
    white wine vinegar
  • 410
    g
    white kidney beans, drained
  • 30
    ml
    mayonnaise
  • 30
    ml
    milk
  • 75
    g
    low-fat cheese, diced
  • 1
    large bunch Italian or ordinary parsley, chopped
 

Method

 
Cook the pasta until done and drain. Season well with salt and pepper and cool. Heat the oil and fry the bacon, onion and pepper over medium heat until done. Add the vinegar and heat for few seconds to reduce. Add the pasta and beans, stirring lightly until mixed. Transfer to a large mixing bowl and cool. Beat the mayonnaise and milk until smooth and mix into the cooled pasta. Add the cheese, season if necessary and chill slightly. Sprinkle parsley over the salad just before serving. Serves 4-6.
