Bacon and mushroom potatoes

Ingredients

    kg
    baby potatoes in their jackets
  • 1
    small onion, finely sliced
  • 2
    cloves garlic (crushed) or 2 ml garlic flakes
  • 50
    ml
    olive oil
  • 250
    g
    bacon, diced
  • 250
    g
    button mushrooms, halved
  • 1
    bunch
    fresh parsley or basil for garnishing
 

Method

Prick the potatoes and microwave in salted water until done.
Halve. Sauté the onion and garlic in olive oil until soft and add the bacon and mushrooms.
Fry until the bacon is done.
Add the potatoes and stir-fry until lightly browned.
Garnish with herbs and serve hot.
