Ingredients (10)

sunflower oil — canola oil
1 onion — chopped
250 g bacon — finely chopped
200 ml flour — cake, sifted
5 ml Baking powder
2 eggs — lightly beaten
45 ml milk
250 ml cheddar cheese — finely diced
30 ml fresh parsley — chopped
potato — wedges, salad, serve

Method:

Heat a little oil and sauté the onion until soft. Add the bacon and fry until cooked. Set aside.

Combine the flour and baking powder. Season with salt and pepper and make a well in the centre. Pour the eggs and milk into the hollow. Stir the dry ingredients in, working from the centre outwards. Stir until just combined.

Add the cheese, parsley and the bacon and onion mixture and stir through until just combined. Heat a little more oil in the pan. Drop spoonfuls of the batter into the pan and fry over medium heat for about a minute a side, or until cooked through. Serve warm with potato wedges and salad.
