Baby squash with sundried tomatoes and chorizo

    butter
  • 1
    red onion, chopped
  • 1
    garlic clove, crushed
  • 150
    g
    chorizo sausages, thinly sliced
  • 100
    g
    sundried tomatoes
  • 500
    g
    green baby squash (patty pans), halved
  • 500
    g
    yellow baby squash, halved
  • 15
    ml
    brandy
  • 30
    ml
    chopped chives
 

Method

10 mins
 
Melt butter and sauté onion and garlic until transparent. Add chorizo sausage and cook for 2 minutes. Steam or boil baby squash until just tender. Drain and stir into chorizo mixture with brandy and chives.
