Ingredients (8)

250.00 g baby spinach
2.00 eggs — hard-boiled, finely chopped
1.00 onion — red or white, thinly sliced
DRESSING
30.00 ml fresh chillies — 573
2.00 ml mustard — powder
2.00 garlic — cloves, finely chopped
sea salt and freshly ground black pepper
15.00 ml vinegar — red wine

Method:

Arrange spinach on a flat platter, sprinkle with chopped hard-boiled eggs and onion.
DRESSING: Cream oil, mustard, garlic, salt and pepper. Stir in vinegar and sprinkle over salad.
Toss gently but thoroughly before serving.
