Baby potatoes with herbed butter

    baby potatoes, washed
  • 45
    freshly chopped parsley
  • 45
    freshly chopped chives
  • 4
    spring onions, finely chopped
  • 50
  • Salt and freshly ground black pepper

Boil the potatoes in their jackets in salted water until tender.
Drain well.
Place the potatoes in a large dish.
Blend the herbs, onions and half the butter and pour over potatoes.
Season with salt and freshly ground black pepper.
Dot with butter.
