Baby potatoes and spinach salad

Ingredients

  • CANOLA DRESSING
  • 15
    ml
    canola seeds
  • 125
    ml
    plain yoghurt
  • 60
    ml
    sunflower oil
  • 10
    ml
    balsamic vinegar
  • brown sugar to taste
  • black pepper
  • SALAD
  • 500
    g
    baby potatoes, scrubbed
  • 250
    g
    baby spinach leaves
  • 2
    rounds feta cheese
  • few stoned black olives
  • few Rosa tomatoes
 

Method

 
Mix all the ingredients for the dressing.
Cook the potatoes in salted water until done.
Drain and cool.
Combine all the salad ingredients and moisten with the dressing.
