Baby apple upside-down cakes

    ml
    golden syrup
  • 3
    small green or red apples, sliced
  • 250
    ml
    self-raising flour
  • 5
    ml
    baking powder
  • 125
    ml
    butter, melted
  • 125
    ml
    castor sugar
  • 3
    eggs
  • 5
    ml
    vanilla essence
 

Method

 
Preheat oven to 180 °C.
Grease a muffin pan.
Place 10 ml of the golden syrup in the base of the greased muffin pan.
Place an apple slice on top of the syrup.
Beat together sugar, eggs and vanilla essence until thick and pale.
Fold in sifted flour and baking powder with melted butter and mix well.
Spoon mixture over the apples in the muffin pans and bake for 18 to 20 minutes or until golden.
Cool for 5 minutes before turning out.
